Where does the information my app collects go?

Open the Data page. It has two tabs: Published (live visitor data, read-only here) and Preview (your own simulated testing data, which resets each session).

Will my app remember things after a refresh?

Yes, when the feature is meant to. Ask for it plainly, for example "save each enquiry and list them for the owner", and Hamish wires it to stored data rather than something temporary.
